



We ended up making two batches, one traditional and one gluten free. Both batches turned out great!

2 1/2 cups all-purpose flour (or gluten free flour)
1 tsp baking soda
1 tsp baking powder
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1 1/2 cups sugar
1/2 cup softened butter
1 cup (can) pure pumpkin
1 egg
1 tsp vanilla extract
Preheat over to 350 degrees.
Preheat over to 350 degrees.
Combine first 6 ingredients in medium bowl and set aside. Beat sugar and butter in large mixing bowl until well blended. Beat in pumpkin, egg and vanilla extract until smooth. Gradually add in flour mixture. Drop rounded tablespoon onto baking sheets.
Bake for 15 - 18 minutes or until edges are firm, let cool completely. Drizzle glaze over cookies.
Glaze: Combine 2 cups powdered sugar, 3 Tbsp milk, 1 Tbsp melted butter and 1 tsp vanilla in small bowl until smooth
